Recipes Sweet Coconut Rice/Narali Bhaath

1.FESTIVE RICE/COCONUT RICE
A sweet rice specially made during the festive season especially for rakhi poornima /narali poornima in Maharastra.


INGREDIENTS:
2 cups basmati rice
2 cups sugar
1 small piece of fresh coconut
4 cardamoms crushed
4 cloves
15-20 almonds
2 tbsp raisins
4 tbsp ghee
few drops of  kesar colour
a pinch of saffron


METHOD:
  • Wash and soak rice for 15 -20 minutes.
  • Cut almond in thin pieces.
  • Cut coconut into small pieces.
  • Add  sugar & cardamoms to 1 1/2 cup of water bring it boil.Once  boiled continue boiling for 5 minutes on sweet flame. Keep the sugar syrup aside.
  • Heat ghee . Add cloves, cinnamon, coconut , almond and rice. Fry for half a minute.
  • Add 2 1/2 cup of water.Bring it to a boil.
  • Add yellow color and saffron. Cook on low heat till water dries up and the rice is almost done . 
  • Strain sugar syrup in the rice.
  • Mix gently. Continue to cook on a low heat till the rice is fully done and the syrup is dry.
  • Serve hot .Garnished with almond ,kaju,raisins and silver leaf.
Some Tips:

If  you like more of coconut flavor increase the amount of fresh coconut and it in a grated form.
Reduce the amount of sugar if you prefer it less sweet.


2.COCONUT RICE WITH JAGGERY:
Much more simplified and faster.

INGREDIENTS:

1cup rice(basmati /kolam/chinor)
1 1/2 cup  coconut
1 cup fresh coconut grated 
3-4 cloves 
3 cups water
4 tbsp ghee

METHOD:

  • Wash rice and keep it aside.
  • Heat ghee in a pressure cooker. Add cloves.
  • Add the washed  rice and saute it for 2 minutes.
  • Add grated coconut ,jaggery and water .
  • Pressure cook the rice until two whistles on slow flame.
