This workshop will teach 

a)Making of basic chocolate sponge ; dutch truffle with the right consistency. 
b) Slicing, soaking & layering of the cake to perfection. 
c)Getting a perfect clean edge on the chocolate ganached
d) A special marble effect creation on the cake & right method of using the comb. 
e) Chocolate garnishes & shavings like fans, cigars. 
f) Truffle laying technique & pouring technique

3. FRESH CREAM PASTRY CLASS: 3 days

This workshop will teach

a)     Baking basic vanilla sponge.
b)     Slicing, soaking & layering of the cake to perfection.
c)     Getting a perfect clean edge on a fresh cream cake.
d)      3 types of borders, shell, reverse shell.
e)     2 types of sides basket weave, ruffles.
f)      1 type of rose & leaves.
g)     Using caramel, truffle, & gel on fresh cream to create a pouring effect.

 BY THE END OF THE CLASS THE STUDENT LEARNS:

a)     Pineapple Pastry

b)     Vanilla choco Pastry

c)     Caramel/butter scotch



4. FRESH CREAM PASTRY CLASS: 7days

This workshop will teach

h)     Baking basic vanilla sponge/ red velvet sponge.
i)      Slicing, soaking/ layering of the cake to perfection.
j)      Getting a perfect clean edge on a fresh cream cake.
k)     7 types of borders, shell, reverse shell, rope barrel, leaf ruffle ,zigzag ,fleur de llis
l)      5 types of sides basket weave, ruffles, rosettes, drop & pull.

m)    3 type of rose, leaves, ribbon rose, chrysanthemum.
n)     Using caramel, truffle, & gel on fresh cream to create a pouring effect.
